What is specialty coffee?

Specialty coffee simply means that the beans we use have been graded by the Specialty Coffee Association (SCA). There’s often a lot of misconception about specialty coffee, that the roaster is a hipster living out of a trendy pad in Brooklyn. But that’s not the case. Well sometimes it is, but that’s not why coffee is defined as ‘specialty’.

What’s the process of specialty coffee?

Our process starts with the coffee farmer, and choosing carefully where we get our green coffee beans from. Once we’re both happy, we import our coffee beans. We always ensure our coffee is ethically sourced because making sure the farmers have the best deal possible is a huge passion of ours.

When an order comes in, we fire up our coffee roaster and add the beans which our customers have ordered. We then carefully watch the process, making sure that our roaster keeps to the right temperature throughout and that the coffee is being roasted to perfection. Once the roasting process has finished, we open the roasting chamber where the beans then fall into the cooling tray. This next process allows the coffee beans the cool whilst getting rid of the chaff which has been produced.

What happens when the beans have been roasted?

Once the beans have been roasted, depending on the order we either package them straight up, or we grind the beans to the customer’s preference – so if you have a favourite brewing method and order your beans to be ground, you’ll receive them how you’ve specified, so you can enjoy your brew the way you like it.

We believe the whole process is specialty, not just when the coffee beans enter our roaster, but from the absolute start. This is why we take care in the entire process. From customers to cafes, we do our best to provide specialty coffee, it’s our passion.

Is it hard to source specialty coffee beans?

Good, freshly roasted coffee should never be difficult to find, in fact, we think everyone should have access to great coffee whenever they want, so if you live within the United Kingdom, it’s free shipping when you spend over £25, so you could order and brew in only a few days.

Coffee bean crops grow during different seasons, which means it’s essential for us to work with the farmer to ensure we’re getting the crop at the right time, when it’s ready to harvest. The factors which are at play are things such as temperature, climate, altitude, and the ground itself and so on, but even after they have been picked, oxidisation takes place and affects the quality. The mission is to keep as much flavour and protect the coffee as much as possible before we roast them and deliver it to your home.

How do you determine the beans you use?

We love trying out new roasts, but before we sell the coffee, we need to make sure we’re happy with the finished roast ourselves. This is where our barista skills come in use – we brew our coffee in all of the different possible ways, established which brewing method brings out the best flavours. This of course is somewhat subjective, however we do our best to guide you during your ordering process, so you know exactly what to expect. We determine the different notes we gather from the coffee and write them down to inform you, and lastly, we welcome feedback. This is a key part in our coffee journey – listening to our amazing customers and their experiences with our coffee.
